Homemade Salsa that’s so good…it’s addicting

Simple & Quick homemade salsa recipe. So delicious...it's addicting!

I loooove homemade salsa. I {might} even be addicted to chips & salsa.  The problem was I had the hardest time  finding a homemade recipe that I just had to have. I searched and searched. And then, I started trying recipes from a cookbook my mom gave me for Christmas several years ago. This cookbook is Ah-maZing! My mom told me my sister-in-law called it “The Cooking Bible”, I call it “THE cookbook”. Either way, we agree it’s a great compilation of recipes.  It seems as though the recipes in this book are pure gold. Thanks Mom, for such an inspired Christmas gift!

I usually make salsa by throwing ingredients in. Maybe that’s my problem. SO, I told myself, “You’ve got to stick to a recipe. Maybe then you’ll find one you like.” And you know what, it worked!!!  The original recipe is from “THE cookbook” and is by Sherry Van Leuven. Although, I did tweak it just a bit.

Ingredients
  1. 1 (28-oz.) can petite diced tomatoes
  2. 1-2 4oz. cans diced green chilies
  3. 1 cup yellow onion- diced
  4. 2 green onions, chopped
  5. 1/2-1 Tbsp. canned jalapeños (take out the seeds and finely dice)
  6. 1 Tbsp. cilantro- finely chopped (optional)
  7. 1/4 tsp. cumin
  8. 1/4 tsp. oregano
  9. 1/4 tsp. garlic salt
  10. 1 1/2 tsp salt
  11. 1 tsp. Lawry's seasoned salt
Instructions
  1. Open the can of tomatoes and pour into a blender.
  2. Give it a quick whirl before adding the rest of the ingredients.
  3. Sauté yellow onion and add to the tomatoes.
  4. Add the remainder of the ingredients.
  5. Mix just until combined (or if you like smooth salsa, mix until smooth).
  6. Keep refrigerated.
Notes
  1. To get the best flavor, let the salsa sit in the fridge for a few hours before eating.
  2. Yields approximately 1 1/2 quarts.
